DESCRIPTION:We promise you will not leave hungry!\n\n  \nFor our Summer Fire & Food Feast we are celebrating beef! We have selected four different cuts of beef\, Bavette\, Short rib\, Brisket and bone in Rib-eye\, which we will cook over the fire. We have carefully sourced this beef from grass fed pasture raised until fully mature to give the meat a wonderful texture and depth of flavour. See all the descriptions and our suppliers below.\n  \n  \n \n\n\n  \nThis Fire & Food Feast will be served in the Riverside Arena with entry to the park and a welcome glass of bubbles at 6pm\, so you have time to walk around the grounds before dinner. We will sit down to dinner at 7pm and we would recommend allowing around 3 hours for the feast. We will round off the evening with a delicious selection of sweet treats. We look forward to sharing this feast with you.\n  \n\n  \n \n\n\n\nThe Beef\n\nBavette\nAlso known as flap steak\, bavette is a flat cut with an intense beef flavour. The bavette is also known as the butcher’s cut\, because butcher’s often save it for themselves. The name “bavette” is the French word for “bib\,” since this cut comes from the lower chest area of the cow close to the top of the abdomen. This well exercised but still fatty part of the cow makes bavette versatile\, in addition to delicious. Bavette should contain a significant amount of fat\, which is why it can be well enjoyed in a variety of forms from sliced thin to simply seasoned and cooked whole.\nBavettes have a similar flavour profile to flank or skirt steak\, two other flat cuts found close by. Bavettes are packed with minerals and are dense with fibre. Bavette\, however\, has a very loose structure\, helping to avoid chewiness or toughness with a lot of wiggle room in cooking method and internal temperature.\n  \nBeef Short Ribs\nBeef short ribs come from the lower ribcage of the cow and are known for their rich\, deep flavour. These ribs are marbled with fat\, which renders down during slow cooking\, making the meat incredibly tender and juicy. We cook our short ribs over a fire\, allowing the heat to break down the connective tissues and infuse the meat with a smoky\, savoury taste that melts in your mouth.\n  \nBBQ Smoked Brisket\nBrisket is a cut from the breast or lower chest of the cow\, prized for its robust flavour and tenderness when cooked properly. Our brisket is slow smoked\, allowing the meat to slowly absorb the smoky flavours while breaking down the tough fibres. The result is a succulent\, flavourful cut that is both tender and rich\, perfect for barbecue enthusiasts.\n  \nBone in Rib Eye\nRibeye’s are cut directly from the ribcage of the cow. The copious amounts of fat on the rib cage provide a depth of flavour completely unparalleled by any other cut of steak. Not only is the ribeye surrounded by flavourful fat\, it’s marbled by it end to end. This fat melts down and opens up the fibres of the ribeye\, allowing it to absorb all of the flavour brought to life by cooking over fire. We slowly bring the steaks up to temperature with a gentle heat to allow the fat to render and then reverse sear them on top of the red-hot coals before resting them for 20 minutes before serving.\nRibeye steaks also take particularly well to dry aging\, a process that adds both tenderness and flavour to a cut of steak by storing the steak in a temperature-controlled environment for an extended period of time.\n  \n \n\n\n  \nReserve your table here:\n\n      \n        \n      \n    \n\n\n\nSource of the meat.\n  \nThe Bavette and Short Rib comes from Lyons Hill Farm in Dorset and has been selected for its exceptional flavour. We look forward to sharing this feast with you.\n  \n  \n \n\n\n  \nThe Steaks\n  \nThe Denver Steak\nIt’s strange to think that parts of a cow can vary in age\, but the Denver cut was not actually discovered until an investigation was conducted by a group of professional butchers from the Cattleman’s Beef Board in 2009\, according to Grill Master University. The task was to find a cut of meat from the chuck roll in the cow’s shoulder. While cuts from the chuck are typically cooked at low temperatures for long amounts of time such as in braises and stews\, the result of the project was a cut fit for a high-heat grill that remains juicy\, tender\, and delicious.\n  \nBavette\nAlso known as flap steak\, bavette is a flat cut with an intense beef flavour. Filet mignon is portioned out of the tenderloin\, which is cut from the short loin of the cow and is completely surrounded by very relaxed muscles that rarely get exercise. This is what makes this cut iconically lean and tender. Cuts of filet mignon are cut into two-inch-thick portions from the entire tenderloin\, but the true filet mignon comes from the extra tender\, smaller tip of the tenderloin.\nDespite filet mignon’s popularity\, it remains a more costly cut of steak as its availability is limited to only a few portions per cow. Additionally\, cost can also vary on the raising of the cow itself\, which does in fact make for substantial difference in flavour and texture. Grass-fed beef yields a more premium cut than their more traditional and more widely practiced grain-fed counterparts. The extra cost does contribute to a richer\, more nutritious and more humane cut of beef. In an era when your carbon footprint can and should be minimized as much as possible\, grass-fed filet mignon is a win-win-win option.\nThe fat marbling of filet mignon cuts is so evenly dispersed and unfettered by constant exercise the only needed preparation to indulge in its richness is to season with salt and cook. That’s it. Hearing the words “filet mignon” immediately communicates luxury\, and the beautiful simplicity of this cut of steak is the reason why.\n  \nBone in Rib Eye\nRibeyes are cut directly from the ribcage of the cow. DESCRIPTION:We promise you will not leave feeling hungry!!\n  \nOur Fire & Food Feast is a little different from normal dining. Here we have a large buffet style table with all the side dishes – mac’ n cheese\, Crushed tallow potatoes\, rainbow coleslaw\, Greek salad\, Waldorf salad\, Moroccan spiced roast beetroot and BBQ carrot salad\, tomato balsamic onion and basil salad. There will also be baked rosemary focaccia and olives on your table when you arrive.\n\nThen we bring the meat course to your table as they are ready – with fire cooking we cook to temperature not to time to make sure they are all cooked perfectly. We will round off the evening by serving café gourmand with a delicious selection of sweet treats.\n\nThis Fire & Food Feast will be served in the Makers Yard Kitchen with entry to the park and a welcome glass of bubbles at 6pm\, so you have time to walk around the grounds before dinner. Dinner will be served at 7pm and we would recommend allowing around 3 hours for the feast. We look forward to sharing this feast with you.\n  \n\n\nThe Meat Courses\n  \nBBQ Chicken Wings\nAlways a favourite – delicious chicken wings marinated for a deeper flavour.\nBBQ Pork Belly\nWith a sticky cider and wholegrain mustard glaze.\nBeef Short Ribs.\nShort ribs are full of flavour since they are effectively alternate layers of meat and fat. The muscle itself is a well-worked and tough cut\, but cooked correctly it results in very tender meat with an easy chew. When slow-cooked\, the fat released will baste and moisten the meat as it cooks\, making it fall off the bone with a really beefy flavour that is buttery and intense. Coming from the chuck and rib intersection\, the short rib has flavour characteristics of both — abundant marbling with a deep beefy flavour\, making them a joyful comfort food.\nA delicious cut that is cooked low and slow on our kamado BBQ’s\nBavette\nAlso known as flap steak\, bavette is a flat cut with an intense beef flavour. The bavette is also known as the butcher’s cut\, because butcher’s often save it for themselves. The name “bavette” is the French word for “bib\,” since this cut comes from the lower chest area of the cow close to the top of the abdomen. This well exercised but still fatty part of the cow makes bavette versatile\, in addition to delicious. Bavette should contain a significant amount of fat\, which is why it can be well enjoyed in a variety of forms from sliced thin to simply seasoned and cooked whole.\nBavettes have a similar flavour profile to flank or skirt steak\, two other flat cuts found close by. Bavettes are packed with minerals and are dense with fibre. Bavette\, however\, has a very loose structure\, helping to avoid chewiness or toughness with a lot of wiggle room in cooking method and internal temperature.\n\n  \n\n\nBook your table here\n\n      \n        \n      \n    \n  \n\nSource of the meat.\nThe Pork Belly and Bavette\, come from Lyons Hill Farm in Dorset and have been selected for its exceptional flavour. It is exclusively from Rare or Traditional breeds of British cattle that are grass fed. It is not your usual commercial beef\, it comes from cattle that are fully matured and live a life that’s 2 to 4 times longer than commercial cattle. This is what old-fashioned beef used to taste like\, before being ruined by crossing our native breeds with continental cattle to make them grow faster and bigger\, to the total detriment of flavour.\n\nFrom our farm to your door; sustainable\, full flavoured meat. – Aurox Meat\n  \n  \nThe Beef Short Ribs come from Meat Matters in Wales\, founded by Oliver Woolnough. These are ex dairy cows that have been put out to grass for a year or two after they have finished milking. This allows the cow to mature and develop flavour. DESCRIPTION:Our award-winning sculpture show opens on April 2\, 2024 with works by more than 35 leading contemporary sculptors on exhibition throughout our 26-acres of lakes\, rivers\, gardens\, and woodlands as well as in the Gallery and The Retreat.  Monumental works will be displayed in the park with more intimate pieces exhibited in the courtyard and gallery.\n  \n\n\n  \nWe are very excited to show for the first time a monumental new work by Nicola Godden\, a 5 metre ‘Icarus’ that you’ll be able to walk underneath.     We are also delighted to be showing four new pieces by Simon Gudgeon including his first ‘sound’ sculpture.  FORM continues to grow and evolve\, and we are pleased to be able to introduce some extraordinary pieces by new artists.\n  \n  \n\n  \nWe are pleased to be hosting a solo show by renowned wildlife sculptor Adam Binder in The Retreat.\n  \n  \n\n  \n  \nThere will be a series of talks and events to accompany the exhibition\, including ‘Meet the Artist’ Q&A sessions with exhibiting sculptors\, workshops and demonstrations.\n  \n

DESCRIPTION:In the world of roses there are many different types and varieties\, all of which require different pruning techniques. In this one-day workshop\, John Cunningham will describe each of the different types and how to tell them apart\, what tools to use and how to care for them\, as well as caring for your plants! \nTrained at The Royal Botanical Gardens\, Edinburgh\, and a qualified designer\, John specialises in pruning and garden development for private clients. He has planted over 60 Royal Horticultural Society and International Show gardens over the past 30 years and has judged for the RHS since 2013. He shares his knowledge with humour and passion and he loves his job. \nYou can bring your own secateurs if you would like but please ensure they are sharp and are clean and disinfected before you arrive. You will need to bring your own lunch\, or you can book a table with The Kitchen on kitchen@sculpturebythelakes.co.uk Arrival is from 10am and the course starts at 10.30am. We break for lunch at 12.30pm and resume at 1.30pm finishing at 4pm.

In this one-day workshop\, John Cunningham will describe each of the different types and how to tell them apart\, what tools to use and how to care for them\, as well as caring for your plants! \nTrained at The Royal Botanical Gardens\, Edinburgh\, and a qualified designer\, John specialises in pruning and garden development for private clients. He has planted over 60 Royal Horticultural Society and International Show gardens over the past 30 years and has judged for the RHS since 2013. He shares his knowledge with humour and passion and he loves his job. \nYou can bring your own secateurs if you would like but please ensure they are sharp and are clean and disinfected before you arrive. You will need to bring your own lunch\, or you can book a table with The Kitchen on kitchen@sculpturebythelakes.co.uk Arrival is from 10am and the course starts at 10.30am. We break for lunch at 12.30pm and resume at 1.30pm finishing at 4pm.
